Pizza Night: Thick and Thin

Before you were gluten-free, did you have pizza when you wanted a simple and tasty dinner? Get the good times back by learning to make delicious pizza—no gluten, dairy, eggs, or soy necessary. We'll start by preparing insalata misto, a salad of greens with finely chopped and marinated vegetables and toasted walnuts. We'll then prepare two delicious pizzas: a risen-crust pesto pizza with roasted vegetables (vegan) and a traditional thin-crust pizza with pastured pork sausage and mushrooms. We'll finish up by preparing some heavenly chewy chocolate chip cookies; then we'll sit down to enjoy the repast. How do you say 'delicious' in Italian?

Gluten-free, dairy-free, soy-free, egg-free, with vegan options. Contains nuts (salad and pesto), yeast (thick crust pizza), and meat (thin crust pizza).

Homemade Bread and Soup

This class is centered around one of the great pleasures of the weekend: homemade bread. We’ll make two loaves of fabulous, safe sandwich bread. To accompany it, we’ll prepare two organic soups: a riff on Julia Child's French onion soup and a vegan smoky split pea soup. For dessert, we’ll make my husband's favorite dessert: mesquite chocolate chip cookies with roasted pecans. Then we’ll sit to talk and enjoy our meal together. It’s the kind of weekend day that makes you sigh with satisfaction.

Gluten-free, casein-free, lactose-free, egg-free, soy-free, with vegan options. Includes beef stock (French onion soup), legumes, citrus (pea soup), nuts (cookies).

February Event Round Up

  • Feb TBA: Gluten Free Diet for Beginners with Dietitian Meghan O'Hara. Interested? Show your interest by sending us an email, commenting below, or signing up at Gluten Free Specialty. You'll be informed when a date has been set.
  • Feb 12 12-2 pm Decorate your own Valentine's Day Cookie for $5. You'll be provided with one heart shaped cookie, 2 frosting options, sprinkles, and a few other fun surprises. Options will be gluten free and dairy free.
  • Feb 12 2-4 pm Need some inspiration and/or motivation for making cookies for Valentine's Day? Mary Mieth will be baking up a storm, offering three fun, simple, and healthy cookie options. She knows how to tweak a recipe to make a cookie fancy without much effort, so why not come observe, and go home with a recipe to surprise a gluten free loved one or your BGFF (best gluten free friend).

Think a safe and satisfying Italian feast is beyond your gluten-free, dairy-free, allergen-free hopes? Think again! Indulge in a wonderful meal and develop your cooking skills at the same time with this celebration of love, food, and love of good food. We’ll prepare—and then devour—easy breadsticks, light minestrone, Caesar salad, lasagna, and then (maybe not quite Italian but definitely amazing) chocolate pudding cake. Valentine's Day Cookie Decorating and Demo

In honor of Valentine's Day Gluten Free Specialty will be offering a full day of Cookielicious Activity on Saturday February 12th

12pm- 2pm: We encourage kids and adults alike to come on in and decorate a sugar cookie in honor of Valentine's Day. Decorate one for yourself, or one to give to that special someone. Access to a heart shaped cookie, frosting options, sprinkles, and more! FREE event, but donations appreciated.

2pm-4pm: Gourmet Cookie Demo with Mary Mieth. Demo/class sharing some easy and delicious heart shaped cookies to taste and learn to make. All are gluten and dairy free. Featured cookies will include filled shortbread hearts, marzipan hearts, and chocolate covered mint hearts.

Camp Celiac Summer 2011

Camp Celiac sign-ups start today! Registrations received between Feb. 1 and Feb. 14 will be given equal priority. Nice system - takes the edge off! Details below. Please address your camp and registration questions to campceliac@gmail.com.



For 2011 there will be TWO separate weeks of camp (each with a different group of campers):

  • Week 1: Thurs, July 21st- Monday, July 25th, 2011
  • Week 2: Monday, July 25th - Friday, July 29th, 2011

The second week of camp is designated for returning campers in case they want to attend the same week as their camp friends, but campers may give as a preference either week. Campers will only be allowed to attend one week and priority is given to campers from Northern California as well as to Northern California campers who have never attended Camp.
Campers from Northern California can register anytime between Feb. 1 and Feb. 14 and will be given equal priority. Registration for counselors also opens on Feb. 1. Counselors can sign up for one or both sessions and priority is given to counselors restricted to a gluten free diet and non-parents. We always need male counselors. We are also looking for a camp MD for session one.
